Looking forward to the 4th of July celebration being chaired by Jim and Linda Otto.
It would be nice to see some of the new residents become involved in chairing these community events. It seems that it is becoming harder and harder finding volunteers to take on the responsibility for the various events. In order to continue as in the past, we need those volunteers.
The weather has been
hot lately so you need to take the necessary precautions to stay healthy.
-Try to stay out of the
sunlight for prolonged
periods of time.
-Drink plenty of water.
-Wear a hat.
Looks like a lot of people in the park have invested in new lawns. The rain has even helped to bring back a lot of the lawns with brown spots.

Thank you, Saddle Oak friends, who were concerned about my health this past couple of months.
Because of my blacking out a couple of times, I had a Pacemaker put in. Yes, I know for most everyone who has had them in the past, they went smoothly. But it was difficult for me, so I spent 7 nights in the hospital and developed very bad dizziness after I came home. The past week I am doing great.
So a big thank you to the Association, people who gave me cards, those who asked Rose about me, and a special thank you to Rose who took such good care of me.
I should return to bowling soon. Thank you.

ARTS & CRAFTS
Fridays - 1:00pm to 3:00pm at the Clubhouse.
Thanks to Corlene Andrew and her daughter-in-law, Cindy, for their donations to projects for the Craft Group.
I have to offer a collection of 15 beautiful baskets, all colors, shapes and sizes, large & small embroidery hoops with prints and padding, macramé angel kits, cross stitch miniature Christmas ornaments with frames, grapevine wreaths, yarn and Norman Rockwell calendar of prints.
If anyone is interested in any of these items, just come to Crafts on Fridays at 1 o'clock or call and let me know.
Also, thanks to everyone who has sent me cards and given me help and advice about my broken wrist, which has really lifted my spirit to keep me involved and happy to stay here and not go to Cleveland this summer.

Residents currently in hospitals or nursing homes include: Marie Jarest in Palm Garden, Marge Whritenour in Marion House, Elsie Robeson in Legacy House and Linda Otto in Ocala Regional. Those hospitalized this past month and now recuperating at home include: George Overman, Audrey Mannix, Michele Lossner, Charlotte Grundstrom, John Churgovich,Bob Robinson, Katherine Sitkowski, Cathy Holly, Fran Gerken, Phil Porto, Ellie Evans.
So far this year we have sent 60 get well cards to shut-ins and 32 Publix gift cards to those who have been hospitalized. Please keep all these folks in your thoughts and prayers.

A Note From the North Country

We are here in this vacation land where the country roads wander under a canopy of green leaves, It is a land of rivers, lakes and tourists. It is a land of birds and wildlife.
Summer guests favor this beautiful green area and we find many cottages and summer homes that rim the lakes. We see the fisherman on the water, swimmers and boats anchored to the piers that extend into the water.
Wild animals are plentiful with young deer dashing from the woods into the road. We drive carefully expecting them. In the fields we see flocks of wild turkeys feeding their young and the tall sand cranes pay little mind to us as we pass. A pair of robins have a nest under the eves of the deck of the house. We have watched the little ones demand food and struggle to flap their wings as they prepare to fly. Sadly, today they glided out of the nest and were gone.
Wild Rose has a population of 735 people. Not much is available for shopping so we make the 40 mile trip to Oshkosh on a regular basis.
All in all, Wisconsin is a great place to be in the Summer! It was cool when we arrived, in the 50’s, but it has warmed up now! It is 72 degrees plus in the daytime.
We love and miss you all! Greetings come from Mike and Nancy, too!

Lemon Grilled Chicken

Serving Suggestion
For a healthy meal, serve with grilled portobello mushrooms and a pasta salad mixed with zucchini and peppers.
Nutritional information Per serving: calories 252, fat 8.9g(satfatl.5g),carbsl.7g
1 lemon
2 tbsp. olive oil
1 clove garlic, crushed
1 tbsp. chopped fresh parsley plus extra sprigs for garnish
1A tsp. dried thyme 1/4 tsp. dried marjoram 1/4 tsp. salt '/4 tsp. black pepper
4 skinless, boneless chicken breasts (about 6 oz. each)
EASY STEP-BY-STEP
STEP
Use a peeler to remove strips of zest from half of the lemon, then trim into fine strips with a small knife. Reserve and set aside. Grate the other side of the lemon to make 1 tablespoon zest. Finally, squeeze the juice from the lemon into a bowl.
In a large bowl, combine the lemon zest and juice, oil, garlic, parsley, thyme, marjoram, salt and pepper. Add the chicken breasts to the bowl and spoon the marinade over the chicken until well coated. Cover with plastic wrap. Chill for 30
minutes, or overnight if you have time.
Preheat the griddle, grill or broiler to medium heat.
Put the chicken pieces on the griddle, reserving
marinade. Cook chicken until
cooked through, about 10
minutes on each side. Brush
with reserved marinade
2-3 times during cooking.
Sprinkle with reserved lemon
strips and serve immediately
garnished with parsley sprigs.
GREAT IDEAS
• The easiest way to prevent lemon zest from sticking to a grater is to brush it off with a pastry brush. You can also use the brush to baste the chicken with the marinade in Step 3.
