Another "Spring Fling" has come and gone. We were blessed with a beautiful day, good music, great food and many good friends to spend the afternoon with. I know you all join me in thanking Sun Communities for sponsoring this event each and every year.
I cannot even begin to list the names of all the volunteers that helped with this event. It takes many,many hands to plan, shop, cook, peel, chop, decorate, serve, move chairs and tables and the ugliest job of all...the clean up! Saddle Oak is very lucky to have all these wonderful volunteers who "step up to the plate" and give their time to make these events successful. Many thanks to each and every one of you.
I know many of you are traveling north is the next few weeks. Please travel safely and hurry back to your Saddle Oak home in the fall. Please stay safe, healthy and in touch with us by getting your Saddle Oak newsletter either by email or the website.

SPRING FLING
The weather has been so beautiful especially in the early morning and evening hours. I have noticed many of our residents out in their yard pressure washing, planting, trimming, edging, and freshen up plant beds with mulch/rock. Thank you for keeping our community looking beautiful.
I want to take this opportunity to welcome our new staff …… Judy Marks,is our new office coordinator. Judy is a resident, and she comes from the HOA as the former Treasurer. She has several years of experience with all types of Administrative work.
Judy has a smiling face and a great personality that makes you smile. Chip Davis,is our new maintenance person. Chip has an extensive background in just about every field of construction and maintenance. Chip is a great people person and has already shown how to go Above and Beyond to help our residents. When you're out and about stop in or stop Chip and extend a "Welcome to the Community" to our new staff.
Some residents have started coming in the office and filling out our "Exterior Change Request" form. Any exterior work or work that requires a permit must have Park Approval prior to having the work done to your home. For example, painting, changing a door, new windows, new siding, aluminum screen room work or additions, extending the shed, A/C replacements and roof work. Also, interior work that requires a permit such as water heater replacement, electrical work, and bathroom remodels. All of these items and more need Park Approval before beginning the work. Just a reminder, check with the office to make sure that your contractor is on file with us prior to the work being
done on your home. Management looks for a Current License, Current Liability naming Saddle Oak Club as the named insured, and Workman's Comp. Insurance(some
cases, can be exempt).
Remember to bring your pets by the office so we can take a picture of your loved one and place on our Pet Board. Also, take a look at the Community Activity Board to see if there is a picture of you or see if you can find your friends. I am creating an Anonymous Suggestion Box in order for residents to have a voice without naming names. This can be used for positive suggestions or for things that need to be addressed in the community. This Locked Box will be located at the office on the porch and can be dropped off day or night.

Some new residents inquired about our States Clubs. We do not have enough residents in our community to allow for a club for each state. We divided them into regions. So far, the Midwest Club has been organized and the Northeast Club will begin in the fall. If any new residents would like to organize a club or join a existing club, please contact Nancy Dougherty (237-4626 or 920-420-1438).
The chairpersons for the Midwest Club are Karen Sammons and Nancy Dougherty. The chairpersons for the Northeast Club are Linda Otto and Jo Gearin. The regions of the US are as follows:

Memorial Day Parade and Pot Luck Brunch
Meet at the clubhouse @ 8:30 AM and we will parade through the community starting at 9 AM to honor our fallen. Starting at 11 AM we will have a pot luck brunch.

Congratulations!
On Thursday, March 29th, Bonnie Leahy made a hole in one at Baseline Golf course. She took a 5 iron and it went right in! She had witnesses. Her husband , Tom, and his school friend and his wife. She is really on a roll! On Wednesday, March 28th, she bowled a 644 series. Her games were 203, 247, and 194. She bowls in a Pins Over Average league which means when you bowl the most pins over average you receive money. Guess what? She bowled 119 pins over her average and got first place! We also play poker with the bowlers. Well, you guessed it! She won the third hand with 4 kings!! We sure hope she played the lottery that week.

Bus Trip to St. Augustine
The Midwest Club would like to invite all of Saddle Oak to join them Friday, May 18th on a bus trip to St. Augustine. The bus will leave Saddle Oak at 9 AM. Once in St Augustine, it will leave us to sight see, shop and have lunch on our own. It will pick everyone up at 2 PM to go to the Outlet Mall. The bus will leave St. Augustine for home at 5 PM. The cost is $35. If you would like to come along, please sign up at the clubhouse. The bus company needs 50 passengers to ensure the trip.

911 Emergency Switch
We were asked by a resident to write an article on the emergency switches that some residents have in their homes. We asked Jim McCourry of our Crime Watch to find out the details. He called the sheriff’s department for information. He told us the following facts:
1. Approximately 50% to 75% of the houses in our community have this emergency switch.
2. It is a separate light switch sometimes located near the phone or the air filter. (It depended on the builder)
3. Flip the switch if you have an emergency and your yard light will blink off and on.
4. In this community only.
5. Crime Watch volunteers are instructed to knock on the door of the home if the light is blinking to see if they can be of assistance.
6. If neighbors see the light blinking, they should also knock on the door to see if they can be of assistance.
7. If you have an emergency, please call 911 and flip the switch if you feel the need.
8. The light comes on during the day as well as the evening.
Leo Keach 509-4327 has volunteered to help any new residents find their switch or determine if they have one in their home.

VOLUNTEERS OF THE MONTH
Our Volunteers for the month of May are Tom and Nancy Pollom. We recently had our annual yard sale which Tom and Nancy organized. That is no easy task (assigning tables, collecting articles getting volunteers and the many other tasks involved in putting that together) Tom is actively involved in the FMO and is currently the representative for Saddle Oak Club. He also received an award from FMO for his recruitment of members. He keeps Saddle Oak up to date on FMO happenings pertaining to our residents. Nancy is always volunteering to assist in any way. Recently she helped put on a poker run and fish fry. Don't forget she also worked with Tom on the yard sale. We really appreciate all they do for the residents of Saddle Oak. Keep up the good work.

YARD SALE SHUTTLE

EASTER BRUNCH THANK YOUS
I would like to thank everyone who helped to make the Easter Brunch a wonderful event. All the bakers who surprised us with lots of goodies, the Easter Bunny who cooked and colored the eggs, all the servers, all the "invisible" volunteers, working in the kitchen, preparing the food, setting up, cleaning up, just to give you an enjoyable time and a good meal. The Spring Fling is over and what a great success. The ladies working the kitchen and preparing the food did such a great job. I felt like I was in the service I cooked so many potatoes, but it was a lot of fun. Many thanks to Joan Record for the wonderful job of organizing and preparing of the food. Thanks to Bonnie Leahy, Vi Simms, Kathy Simms, Toots Lobe. Nancy Dougherty for helping to prepare the food. Thank you Karen Sammons for the decorations and setting up. The volunteers in Saddle Oak help to make this such a great place to live.
*I would like to say a hearty thank you to all who called or asked about Ken while he was hospitalized. It was touch and go for a couple of days. His last X-ray came back clean. He is up and doing his yard work again. The doctors said there must have been a lot of prayer. It is a miracle for sure. Thanks to all for the lovely get-well card and to Fran Bolson for the delivery of the card and the Publix gift card. It sure came in handy. We also owe a blessing and thanks to our caring neighbors who are so wonderful, for the delicious dinner. A big thanks to Carole Lyman for taking over the dog walking duties. If you would like to learn how to do "One Stroke" painting on a flower pot (it is not hard), my sister-in-law will be visiting and has said she would do a one-time class that day. YUMMY RECIPE
Gramma's Raisin Cupcakes
2 cups raisins 2 tsp. baking soda
1 cup shortening 2 Tbsp. hot water
1 1/2 cups sugar 4 C flour
2 cups water
2 tsp. cinnamon
1 tsp. cloves
Boil ingredients till shortening melts. Let cool
then add baking soda in hot water. Add to mix then add flour and stir well. Bake at 350 for 30 minutes in greased cupcake pan or use foil cupcake papers.
DELICIOUS SPRING SALAD RECIPE
California Tuna Salad
1/2 tsp. grated lime rind
3 Tbsp. fresh lime juice
2 Tbsp. olive oil
2 tsp. honey
1/2 tsp. ground cumin
1/2 tsp. salt
1/2 tsp. liquid red pepper seasoning
1 ripe avocado (about 12 ounces)
2 cans (6 1/2 ounces each) tuna packed in water (low salt recommended0, drained
1 sweet red pepper, roasted, cored, seeded, peeled and cut into 1/2 inch squares, OR half of a 7 ounce jar of roasted red peppers
8 oz. can water chestnuts, cut into cubes (1/2 C.)
2 Tbsp. chopped cilantro OR parsley
1. Whisk together lime rind and juice, olive oil, honey, cumin, salt and red pepper seasoning in medium sized bowl until blended.
2. Pit, peel and cube avocado. Add to dressing; toss to prevent discoloring.
3. Flake tuna into bowl with the avocado and dressing.
4. Add red pepper, water chestnuts and cilantro (or parsley) to tuna; toss to combine. Serve chilled.
NOTE: recipe is just as good if halved or doubled.
LITTLE HINTS
Before measuring honey or other sticky ingredients, dip your spoon in oil.
Out of icing for your cupcakes? Just pop a marshmallow on top of each cupcake for a minute before they come out of the oven. It will make a delicious, instant gooey frosting
