PRESIDENTS MESSAGE

October is almost here and it’s almost time for the snow birds (or our part-time residents) to return to Florida.

Things should start to cool down here in Florida in the next month or so.

September was another slow month here at Saddle Oak Club with very few activities planned.

The Pot Luck Dinner saw a modest turnout and The Roast Pork dinner was very tasty with the attendance not to bad for and August event. The volunteers worked hard and did a great job.

Special thanks to Linda and Jim Otto, and Dave and Diane Anderson and Dorothea Wiley for chairing the dinners!

Don’t forget the Thursday night game night!

A Murder Mystery Dinner is being planned for the end of October so keep an eye on the newsletter for more information. This should be a fun night!

Keep safe and be careful traveling on the roads.

ROAST PORK DINNER

I hope everyone enjoyed the Pork roast dinner which would not have been possible without the many volunteers who worked very hard to make it happen. Thank you to the ladies who so generously offered to take the roasts home and prepare them so our ovens would be free. Irene Kramer, Mirta Harris, Sue Whritenour, Diane Anderson, Elaine Baburek and Gladys Ouimette.

The one thing that was really great were all the men that volunteered to help It sure made it a lot easier on us ladies.

We need to thank Bev Brackenridge Harold Whritenour Bob Smith Matt Walters Ruth Robinson and if I forgot anyone I apologize.

And thanks to Bob Smith and David Anderson our meat cutters.

A special thanks to Bob Smith our dishwasher of the year for washing every dish we used. Last but not least Harold Whritenour who saved our backs by coming to our aid to be the official FLOOR WASHER.

Great Job ONE AND ALL!

Our Christmas trip is set for Dec. 20th. The cost is $63.00 per person. I would like to have the money no later then Oct. 31st. We have a full bus, but we do have a waiting list.

Hi, y'all, from Ruth Wheeler in Upstate New York:

With only a few weeks left, I'm "thinking Florida", and as always, I look forward to my escape from ice and snow. If all goes as planned, I'll be back the last week in October. I understand Betty Overman has done a great job keeping the ladies lunches going during the summer. She tells me that October will be her last one, so I guess I'd better start thinking about November. I can plan it from here, then be back in time to post a sign-up sheet when I arrive.

I appreciate very much all of Jim and Elaine's expertise in putting the newsletter together, and for Kathy faithfully making it available to read on line.

The newsletters, along with phone calls and e-mails, have kept me informed about what's happening in Saddle Oak. I'm saddened to hear of so many old friends selling and leaving, but I know there are valid - sometimes urgent - reasons for those changes.

I look forward to seeing you all soon. And ladies, I've had some ideas about where to go for lunch in November, but haven't had a chance to arrange it yet.

For now, just save the date - Thursday, November 19.

RECIPE CORNER

CHICKEN PICATA

• 2 full boneless chicken breasts or 8 boneless tenders.
• 1 cup flour
• 1/2 tsp lemon pepper
• 1/2 tsp Paprika
• 1/4 tsp salt
• 1 egg
• 1/4 cup milk
• 6 tbsp butter
• 3 tbsp olive oil
• 1 cup wine
• Juice of 2 fresh lemons
• 3 tbsp capers and juice


Directions

1. If fresh breasts, place each breast between wax paper to pound chicken flat. Then cut in half, then cut each length wise. If you are using the frozen chicken tenders, defrosted of course, just use from the bag. Thawed frozen taste just fine.

2. TO 1 CUP FLOUR ADD LEMON PEPPER, PAPRIKA, SALT.

3. BEAT 1 EGG AND ¼ CUP MILK. DIP EACH BREAST IN MIX , THEN DIP EACH BREAST IN FLOUR MIX AND LAY IN A SINGLE LAYER ON WAX PAPER.

4. IN A LARGE NON-STICK FRYING PAN HEAT 3 TABLESPOONS BUTTER AND 3 TABLESPOONS OLIVE OIL (OIL HELPS PREVENT BUTTER BURNING). BROWN AND COOK ALL CHICKEN BREASTS. WHEN DONE PLACE BREASTS ON A PLATE.

5. COOK ON “HI” 1 CUP WHITE WINE. BRING TO A BOIL THEN ADD JUICE OF 2 LEMONS, 3 TABLESPOONS CAPERS AND JUICE, AND 3 TABLESPOONS BUTTER. BOIL A LITTLE, THEN RETURN CHICKEN TO PAN. REDUCE HEAT TO MEDIUM AND COOK FOR ABOUT 5 MINUTES.

6. SERVE TO PLATES, SPOONING ON CAPERS AND LEFT OVER SAUCE. THIS IS A KILLER DISH.
