....thoughts from the SOCHA president,

Luther and I are back from our trip north. We were in five different places in two weeks and traveled a couple of thousand miles. We came home travel weary with piles of dirty laundry. We were happy to see the Saddle Oak Club sign and happy to be home in our own bed!! Now that I am rested and have clean clothes I am thinking about where I want to go next!!!!!

During the time we were gone I see that some new people have moved in, some snow birds are back, and some fun events are being planned for October, pasta dinner, fall festival, Fran Fritz is planning an event for the residents who have been here a long time, golf and bowling is starting up again. It is such a good thing to have so many new ideas from our residents, planned activities and great enthusiasm about living in Saddle Oak Club.

Please join me in welcoming Judy Marks as the new treasurer for the SOCHA. Judy has lived here for about a year and comes with a great background in bookkeeping and accounting. I know she will be a valuable asset to our organization. I also want to thank Bill Kramer for all of his valuable input to the HOA for the past five years. He and Irene both have volunteered their time for over five years and we should all be grateful for their service to the HOA. He and Irene are going to "kick back" and enjoy some retirement which they richly deserve!

We have an association meeting planned for the first Wednesday in October and we hope to see you all there. If you have not yet had the chance to join the homeowner's association you will have the opportunity to do so that night. Ginger and Tony will be ready to sign you up!!!!

I had many people tell me how much they liked the letter I had in the September issue about "growing old"...probably because there was so much truth to it!!! A dear friend sent that to me and I am happy that I could share it with you. If you would like a copy of it, please let me know and I will email it to you. Something else to share..."Life is too short for drama and petty things - laugh insanely, love truly and forgive quickly - Life isn't about how to survive the storm, but how to dance in the rain".

SADDLE OAK SINGLES

Our next monthly meeting will be Wednesday, November 2, 2011 at 11 AM in the Clubhouse. The vote for locations to have our Lunch Outs was tallied at our last meeting. Since Thanksgiving is the fourth Thursday, there will be NO Lunch Out for November. We also discussed having another Community Pot Luck on February 11, 2012. So if you’re not going on the SOC Cruise, come join us for great food and conversation. More details will follow in the future.

Since we no longer have Leo, the produce guy, visiting Saddle Oak, we’re planning to car pool to some of the local produce people nearby. We’ll be announcing at several Saturday morning coffees where we will be heading after the meeting. Bring a tote bag with you just in case.

Our next Lunch Out on the Town is Thursday, October 27, 2011 at 11:30 AM at the Olive Garden on Route 200. Sign up on the clipboard to reserve your seat.

We’re going to sleep in! Therefore, Monday breakfast will now become Monday Brunch. Beginning October 10th we will meet at 9:30AM at the following locations:

Curried Fruit Bake
(from the kitchen of Grace Spiller)

• 1 can peach halves
• 1 can pineapple slices
• 1 can pear halves
• 1 jar maraschino cherries
• 1/3 c. butter, melted
• 3/4 c. brown sugar
• 1/4 tsp. curry powder

Preheat oven to 325. Drain fruit on paper towels. Arrange fruit in 1 1/2 qt. casserole dish. In a small bowl, combine butter, sugar and curry powder. Sprinkle over fruit in casserole dish. Bake, uncovered, at 325 for 1 hour. If you want to make this the day before, just refrigerate AFTER baking. Reheat at 350 for 30 minutes. Serves 10-12 people.

OCTOBER VOLUNTEER OF THE MONTH

Volunteers for the month of October are none other than Dan and Claudia Janis. They are newcomers and have jumped right in to help whenever they can. Claudia is a Bingo Caller (not an easy task for anyone). She has also taken over running the kitchen. Dan and Claudia are always helping to do whatever they can; shopping, serving hot dogs at Bingo and organizing Darts, just to name a few things they do. What a pleasure to have such great people living in our park!

BEREAVEMENT REPORT

Caryl Miller passed away on September 11 2011. He is survived by his wife, Judy.

Chuck Doherty passed away on August 11, after the Bereavement Report had gone to press. Chuck leaves his wife, Dot.

THANK YOU, AND YOU AND YOU....!!!

Thanks to all our friends at Saddle Oak. We finally arrived home after almost 3 months in the hospital and rehab. We both want to thank everyone for the visits and cards that we received. Thanks to Dick and Pat Houk for watching our mail, etc. Thanks to Glad and Dick Oimette for doing our grocery shopping and cooking for us. Thanks to Joan and John for all their help when our sons were here. Thanks to Fran for her visits and the gift from the association. Also, thanks to Glenn, our nephew, for transporting us to Melbourne for our family reunion. Fondly, Al & Janet Stacy.

As most of you know in March I was diagnosed with Lung Cancer. I am happy to inform you that after six months of chemotherapy, the cancer is now in remission; however, a new spot on my right lung has appeared and a biopsy is scheduled for next week to determine if it is another cancer.

I want to take this opportunity to thank all of you who have sent cards, called as well as visited me while hospitalized. I especially want to thank Ken and Linda Banks who have done so much to help Marty and me, especially Linda as each morning she made sure our newspaper was at our door when we would wake up. She also took our trash to the curb on every collection day. Another special thanks to Johnnie and Jean Stephens for the wonderful baked goods that Jean not only baked but delivered to our door; they were appreciated as much as they were delicious.

Thank you to Grace Spiller for sharing a great recipe for her Vidalia Onion Casserole. I have made it several times now and have gotten rave reviews. I have also found that you can add things to it like colored peppers and red onions to give it an even more colorful presentation. I also suspect it could even be a complete meal dish with some bacon, sausage or ground meat. Maybe I’ll try that next! :D Keep those great recipes coming ladies! Sammi Koester



HOT DOGS AT TUESDAY BINGO!!!!

Between the hours of 5 and 6:30 pm, hot dogs will be served at Tuesday Bingo. A Sabrett Hot Dog Meal consists of the dog, chips and beverage for $2.25! The condiments are: mustard, catsup, relish, chopped onions sauerkraut and chili. Stay for Bingo or just enjoy a quick meal!

INTERFAITH

Dick Ouimette has cards for the Interfaith High Five campaign. The cards are $5.00 and your participation will enable Interfaith to carry on their important ministries to our community. Please see Dick. Also, don’t forget the Interfaith food bins in the clubhouse. Your contribution will help a hungry family in these hard times.

ARTS AND CRAFTS

The monthly craft display will be October 22 in the Clubhouse. On October 7th and 8th, from 8:00am to 3:00 pm the Angela S. Santos Ladies Auxiliary Veterans of Foreign Wars will be having their annual Flea Market and Yard Sale. Everyone is invited. There is no admission, bargains galore, bake sale, refreshments and much more. Come and enjoy.

VETERAN’S TRIBUTE

We will be creating a display board in the clubhouse honoring all of our Saddle Oak veterans or any family members you may have who are serving in the armed forces.

I would like o have this tribute completed by our Veterans Day celebration, which is November 12th.

I’ll start collecting military pictures approximately October 15. We will be out of town till that date. Please call me at 237-4626 if you would like for me to pick up your pictures. Otherwise, you may bring them by my house at 5690 SW 56th Place anytime after the 15th.

If you would like to keep your original and display a copy, let me know and I will make copies of your pictures.

Our veterans deserve all the recognition they can get and I hope Saddle Oak can help with that recognition.

CHRISTMAS ORNAMENT CONTEST

At Annual Christmas Craft Show
November 5, 2011
Entry Rules:

1. Ornament must be HANDMADE or HAND PAINTED
2. Use of basic premade ornament form will be accepted provided decorating or painting is completely hand crafted or hand painted.
3. Judging will be on skill and creativity.
4. Prizes for 1st, 2nd and 3rd place will be awarded. 1st place will be $$ total of entry fees. 2nd and 3rd place prizes will be a special gift.
5. $1.00 entry fee for each ornament.
6. Registration will be Friday, November 4 from 1 pm to 4 pm.

NEEDLE WINNER – Needle, needle, who’s got the needle? Susan Fahrney does! Congratulations, Susan! To be a winner simply find the needle hidden in this issue, write your name and location of the needle on a piece of paper and drop in the box in the clubhouse. This is not hard –you can do it! OLD TIMERS – October 16, 2011 at 2:30 p.m .is the date and time of the “Old Timers” get-together. “Old Timers” does not mean how old you are in years, but the amount of years that you have lived in Saddle Oak Club. Also, it does not mean Saddle Oak’s OLD PEOPLE as I have heard us referred to. If you have lived here 18 years or longer and want to attend this event please call us (Fran and Jim Fritz) at 237-5931. Or if you have lived here a year or two under 18 years please call us. We are looking forward to seeing all of you and having a good time.

THE SADDLE OAK PLAYERS are presenting a Mystery Dinner and Show on October 29th. We are really looking forward to "eliminating" someone! I wonder who it will be?

MUSIC IN THE PARK - Please mark your calendar for this upcoming event. Sun Communities is sponsoring Music in the Park on Saturday, November 12th at 2:00 p.m. Featured will be The Amazing Steel Drum Ensemble. Come bring your lawn chairs and join us for some great entertainment and refreshments served by John and Joan Record. We will be having hot dogs, drinks and old-fashioned popcorn. All of this is sponsored by Sun Communities for your enjoyment at no cost to residents. So come and enjoy the fun!

IT’S BEGINNING TO LOOK A LOT LIKE.....

Before you know it the holidays will be here. Again this year I will be getting bears to dress and stockings to fill for the less fortunate children sponsored by the Salvation Army.

Last year the residents were so generous in helping to make Christmas special for these children, so now would be a good time to start collecting things to fill the stockings. Thank you. Linda Otto.

There will be two bus trips coming soon: in January a trip to Medieval Times Dinner and Tournament in Kissimmee and later, in the month of March, will be River Ship Romance on the St. Johns River, with a small cruise and a delicious lunch. SOME IMPORTANT THINGS TO REMEMBER:

PETS – Many of us are pet owners and we love our pets………..please remember that our neighbors don’t necessarily love our pets like we do so we must keep that in mind when our pet is ready to “potty”.

CLUBHOUSE – Yes, you can book the clubhouse for a personal event through Nancy or Katherine. Please clean up and leave the clubhouse as you found it. If you move tables and chairs, please put them back as you found them.



ABOUT RECIPES:

Every month we receive great recipes for the Newsletter, but due to space restrictions, we cannot print them all at once. We do keep them and you probably will see them at a later date. Recipes are a popular feature of our Newsletter, so keep ‘em coming!

5 MINUTE CHOCOLATE MUG CAKE

4 T flour
4 T sugar
2 T cocoa
1 egg
3 T milk
3 T oil
3 T chocolate chips (optional)
A small splash of vanilla
1 large coffee mug (micro safe)

Add dry ingredients to mug and mix well. Add the egg and mix thoroughly. Pour in the milk and oil and mix well. Add the chocolate chips, if using, and vanilla extract and mix again. Put your mug in the microwave and cook for 3 minutes at 1000 watts. The cake will rise over the top of the mug, but don’t be alarmed! Allow to cool a little and tip out onto a plate if desired. EAT! This can serve 2 if you want to feel slightly more virtuous.

PARMESAN CRUSTED CHICKEN

½ cup Hellmanns or Best Foods mayonnaise
¼ cup grated parmesan cheese
4 boneless skinless chicken breast halves (about 1-1/4 lbs.)
4 t Italian seasoned dry bread crumbs

Preheat oven to 425. Combine mayonnaise with cheese in medium bowl. Arrange chicken on baking sheet. Evenly top with mayonnaise mixture, then sprinkle with bread crumbs Bake 20 minutes or until chicken is thoroughly cooked. Also terrific with Hellman’s or Best Foods Light Mayonnaise or Hellman’s or Best Foods Canola Cholesterol Free Mayonnaise.

BEST EVER CHOCOLATE CAKE

Time25-35 minutes
Serves 8
1 Chocolate Cake Mix
1 Cup water
1 Cup real mayonnaise – NOT Miracle Whip or Salad Dressing
3 eggs

Pre-heat oven and prepare pan(s) according to directions on cake mix package Combine all ingredients, and mix according to directions on box. Follow the directions for cooking times. Cake is done when a toothpick or cake tester inserted into the middle comes back clean Take cake out of oven and place on rack to cool. When the cake is completely cooled ice cake in whatever way you choose. Enjoy! This cake will stay moist for days. Variations – any flavor of cake mix works. When the cake is done, you won’t taste the mayonnaise.

EASY BEEF STROGANOFF
From Jackie Barth

11/2 lbs. Lean beef stew meat
1 Sliced onion – use yellow onion as they are tastier than Vidalia
2 T oil
11/2 Cups water
1 Can sliced mushrooms
1 small container of sour cream
3 heaping T tomato paste
3 T Worcestershire sauce

Cooked rice or noodles Brown onions and beef in oil. Add water and cook in pressure cooker 15 minutes or simmer 1 hour in regular, covered saucepan. Mix sour cream, tomato paste and Worcestershire sauce. Add to beef and onion. Add mushrooms. Heat together but not to boiling. Serve over rice or noodles.
